I love a good holiday cookie.
One of the best in my mind is a thumbprint cookie.
You can do so much with a basic recipe to make it your own.
I live a simple jelly or I guess technically a compote since it is made with fruit chunks and sugar.
However, you do you and add what you like to the center of this wonderful little cookie.
What you will need:
1 cup of butter (room temp)
2/3 cup sugar
1 teaspoon vanilla extract
1 egg
Pinch of salt
2 1/4 cups flour
Jelly (compote)
1 1/2 cups mixed berries
1/2 cup sugar
1/4 cup water
1 teaspoon cornstarch
Where to start:
Start with the compote.
Place berries, sugar, and water in a pot and bring to a boil.
Cook until all of the berries start to breakdown and it starts to boil.
This should take about 10-15 minutes.
Add in the cornstarch and cook for another 5 minutes.
Take off the heat and let it cool while you stir on occasion.
To make the cookie:
Start with creaming together 1 cup of room temp butter and 2/3 cups sugar.
Add in vanilla extract and egg.
Make sure that all of the ingredients are mixed well.
Scrape down the side of the bowl if you are using a mixer.
Add the pinch of salt.
Then add in the flour a tablespoon at a time.
If your batter is still sticky then add another 1/4 cup of flour.
The mixture should form a loose ball.

Use a spoon to get out enough dough to roll a ball that is about an inch.
Place onto a jelly roll pan and press the center of the ball to make a “thumbprint.”
Bake at 375• F or 190.6•C for 4-5 min.
Then take the cookie out and make the thumbprint area to where you can add in a teaspoon of the compote to it.
Put back into the oven for another 3-4 minutes or until the edges just turn a light brown color.
Place on a cooling rack.
You can leave these at room temperature for 3-4 days or in the fridge for 5-6.
To be honest the first batch never even make it to a container and the rest barely make it to day 4.
